Last years model is the U8H. The U7K is a lower end model for this year. TV naming conventions are weird.
Is it worth the price difference? That depends on your intended use case but I think the U8K hits a sweet spot of cost to performance. Use rtings.com to compare the two if you want to see the differences.

Rtings loves the U8k as a budget 4k 85"+ screen... But Reddit consistently hates on Hisense, and says the jump to a Sony TV is worth it. Anyone have experience?

I have 3 hisense tvs. 2x u8h (55" and 75") and 1x u8k (65") . ALL are working well and no issues. Fantastic panels. Bright as hell. They compliment my LG CX well.

U7K hits the sweet spot for price to performance IMO but it you have a bright room the U8K (or TCL QM8) is the way to go. 75U7K will be $899 in a few days.
