With this one you're paying $20 more for a selection knob vs buttons , and either the push button quick release or the slider switch but either work fine not burning fingers. The other is a Preheating message, which is only an indicator to let you know Saute has not reached "Hot" yet. No deal breaker there, IMO. The $60 one would be my choice if I had to buy again. I have a few of these Instant Pot Duos. I have not tried the Sous Vide function in the IP so I can't vouch for that, mainly because I use an immersible SV.

I think the most important difference is this one has a tri-ply stainless inner pot, while the $60 one has a non-stick (aluminum?). Some prefer the durability and/or sauteeing performance of the stainless. The stainless inner pot alone is $35 at Amazon at the moment, while the non-stick is $20. Also, the older version of this is currently $70 at Amazon if one cares about the inner pot but not the new features.

Functional wise, they are pretty much the same. The other one is significantly cheaper (almost $20 less) with egg rack.

What this model has for them is look, and the quick release button placement (less likely to accident jumpscare yourself pressing the quick release and hot steam gushing out just whisker away).

If I am reading this correctly, this one has a dishwasher safe lid. The cheaper one at Target does not.

$60 is Stainless Steel. Look at the pic. There's no black rim, which indicates it's not ceramic lined

Target [target.com] has the 6qt Duo on sale for $60. It has the new steam release. It also has the non-stick coated stainless pot. (which I don't have and definitely don't want). I have the original (same model with the old lid design). The key to releasing the steam on that one is to put a cloth over the vent and touch the outside of the cloth to start the steam release, while leaving the cloth over just one side of the handle so that steam can pass under it and come out the front. The newer release is much quicker.

the pic does look like stainless, but then the spec says "Removable Nonstick Cooking Chamber", so not totally clear.
