I have not had this brand, but I got the GE when it came out. Maybe they have gotten better over the years, but I had to put mine on quick recovery since the heat pump was slower to heat the water back up vs the element. Perhaps this brand is better. To counter the issues I had and to maintain the energy efficiency, I suggest spacing out the big hot water usage, or just realize the energy efficiency you bought this for in the first place is not realistic when you set it for quick recovery.

ve had this issue with my 50 gallon uni in previous homes t but was thinking about starting with an 80 gallon this time to mitigate running out of hot water because heat cycle is too long. washing dishes and 2 showes and the second shower might run out of hot water.

That's generally known... heat pumps are more efficient but take longer.
I've had the 80 gal rheem installed since 2020 (I think?! Can't remember) and have not had any issues... ours was bought on sale for like $1600 or so I think.
The Rheem can run in hybrid mode so theoretically running out shouldn't be a big issue because it will fall back to resistance mode and heat the tank more rapidly, of course this is at the expense of more energy cost. An option for some could be using a thermostatic mixing valve: https://www.rheem.com/water-heati...er-heater/
I have the 50gallon one from rheem and we set it to heat pump only at night with a higher temperature. And then in the morning we set it to hybrid mode.. works great, for a family of 4 with 2 young kids (lots of laundry) we use about 4 - 5 kwh per day. Which is about $1 a day.

I would highly recommend the Rheem heater.
