Or maybe it's just painful because it's true
The you end up with a $600+ router
You find out about ubiquiti and the proconsumer and end up with a
an overpowered pfsense router
new shiny 6e AP's
New poe switch (because your devices doesn't show up in the pretty map that the controller has).
What's this? Multigig switches with poe?
.... It's a horrible addition.

Likely not. Too many unknowns, but assuming you are using the ATT router/gateway as to provide wifi and internet to your house by itself, then maybe.
You likely have a BGW210 or 320, and they usually work well enough. You're likely on a GPON fiber connection (or XGSPON), which can in its last mile suffer from over-subscription, but shouldn't result in dropped internet- merely slowdown.
If you buy a Ubiquiti gateway, or any other vendor, you can put the ATT gateway into passthrough mode. This offloads any routing and wifi to whatever equipment you buy.
Honest opinion is to call ATT and have a tech rolled out to you home. They can check the fiber, the gateway, ONT (if you have one), and give you a better answer than we can.
1) Wi-Fi is too far away, they put my BGW in the garage in the farthest corner of the house. That's the worst place to put a Wi-Fi access point. I instead routed an Ethernet connection to another separate AP in the center of my home on the second floor and it covers my whole 2000sqft house perfectly. Reaches all my IP Cameras on the exterior of the house too. I turned off the BGW Wi-Fi to reduce interference on the airwaves. You might want to also do a channel scan to see if your Wi-Fi is on a crowded channel.
2) Something on your network is taking all the bandwidth. If you can, eliminate everything except 1 client device for a day to see if you still see the issue. If it's stable, slowly add more devices until you start seeing the disconnect issues. You can narrow down the problem by process of elimination.
3) It's entirely possible there's something wrong on the ISP side or something wrong with the BGW so it doesn't hurt to check with AT&T on it. The Smart Home Manager mobile app gives you some info on the BGW connection health.
