As someone who rides a rando Taiwanese frame (Fuji) with an Ultegra groupset...buy a legit frame. I'd sooner have a reputable aluminum frame with 105 (or Tiagra) and get nice wheels, especially now that everyone sands weld so they're visually very similar to carbon frames.
The headache of dealing with random bottom brackets, not being able to find specs, random aftermarket plastic bits to make stuff work, 0 customer support down the line or stocked parts is not worth it. If you're not ready to drop $2k on a carbon frame don't try to cheap out, you don't get the best of both worlds; at least direct-to-consumer companies like Canyon offer pretty solid prices.

Disc brakes have better and more consistent stopping capabilities (especially in wet weather and muddy terrain), which is all I personally care about. I got rid of my last cantilever model a couple months ago, so now all three are disc. Brake adjustment is part of the tune-up I have done by a bike shop any time I get a new bike, and I don't have a reason to remove my tires, so all three of mine have stayed true (Trek FX-3 for 3+ years).
I recommend disc brakes for everyone if it's financially feasible.

The Components pull down list still lists 105. The same as OPs post. But it is worth taking screenshots just in case it doesn't arrive correctly.
I was checking couple time a week over a month period on the Grand Canyon 5 when they dropped it to $500. It was only in L and XL in the blue and later an entire size run of red got released; since then the blue has restocked a few more times with a handful of other sizes. It's clear they move product well in the US and have trouble keeping stock -- swap over the the German website and you can see the US branch has probably 20% of the bike models & accessories the EU gets. I'm hopeful the US branch starts getting more
i have not tried them personally but the shimano hydraulics have a very good reputation.
i wouldn't buy a bike without disc brakes.
If you can afford it, I would also look at the Grizl CF SL 6 - basically the carbon version of the one above. It is $1799, but lighter and probably a more comfortable ride given carbon frame absorbing vibrations slightly better than alloy.
I am 6'4, 215 and got size XL. Their sizing calculator is pretty close from what I have read and the XL definitely fits me well.
