Anyone care to elaborate why to avoid the J model for more robust endeavors like plex server transcoding 4k etc.
The cpu isn't as powerful as the + models, and that cpu choice on the j models limits hardware transcoding (I think it's missing instructions sets). Also, the j version comes with a fixed 1gb of ram, whereas the + model has more and can be upgraded. The ram and the lack of cpu grunt limits the ability to transcode.

Should I add extra RAM if I'm using the NAS primarily for data backup purposes? Or does the RAM only really affect it if I'm going to use it as a streaming box?
Synology still not offering 2.5gb or 10gb as default is criminal.
TBF, these models are intended to be used with HDDs and they don't offer cache drives so you'll never be able to saturate a gigabit Ethernet connection with this setup.

Don't get ram from Synology. You can get this box up to 6GB for less than $10 with aftermarket stick or go up to 32GB unsupported and stable.
More ram would only be needed if you run a lot services which require memory. I have a few docker images on mine as well as photos app running. 6GB is more than enough for me.
