TY excited to try this out on my Quest 2. Does this mean I can play ANY SteamVR game wirelessly then (based on network speed)? Any concern Meta will remove it from their store for being a competitor store?

Yeah, it sure sounds like that's the case - any SteamVR game will work direct to the headset, no Airlink or VD required. Obviously, if you don't have at least a decent network (speed, latency), I don't think any of the options will work well. I'm sure Meta gave this their blessing. I doubt it's going anywhere except being installed on millions of headsets. ;-)

It bypasses Airlink. The entire wireless connection is controlled by Steam Link. From the reviews, it sounds like a big (potential) improvement in performance. It's essentially SteamVR with Steam's version of Airlink built in. I don't use Airlink, I use Virtual Desktop - I had too many issues with Airlink. I will be interested to test VD against Steam Link.

Sorry for the newbie question - is it better to play Alyx on a Rift or using this app to a Quest 2. I'm mainly wondering about graphics but welcome all feedback/answers

Yeah people definitely should not assume just because it's made by steam it will run steam faster/more smoothly.
In fact, when streaming games from PC to non-VR devices (other PCs, android devices etc) it's pretty widely accepted that alternatives like Moonrise and Parsec usually perform better.
However, steam link is slightly easier to get up and running. And steam link controller support tends to have less issues and more customization options.
So does that mean I can finally play Rick and Morty on my Quest 2?
If you have a decent spec gaming PC and a good WiFi netwtork, then yeah. But technically you could have already been doing that with Air Link (free) or Virtual Desktop (paid).
Steam Link is basically a bit easier to get running than the other two IMHO and so far seems to work well.
