The key difference I've noticed is that Nuun gives you that caffeine-like kick instantly. Like last week I finished a hike in Zion and just wanted to go back to the hotel and rest. I popped a Nuun in a 16oz bottle and voila, I was at an Italian restaurant enjoying ravioli.
For me, I love a nuun tablet after a day of skiing or a big mountain bike ride and I definitely feel better than when I skip it. Often combine it with a scoop of collagen powder (just because it is a protein that has limited flavor and dissolves ok cold, not because I think collagen is magic) in an insulated tumbler for my recovery drink on the drive home.
Long road/gravel rides are better with something *during* the ride. I don't like flavors getting stuck in my water bottles so I often use SaltStick chews instead of nuun.

I also used it when going hunting and hiking, and a few times after cycling. It was very helpful with the dehydration I always experienced after.
Since then, I've moved on to just water with Magnesium Malate/Potassium Chloride/Sodium Bicarbonate. It tastes horrible, so I only use it for solo activity. It is a chore to mix it in the right ratio, so I do it in massive batches and use a tbsp scoop for my gallons.
