This big enough to make enough ice for a barrel ice plunge bath? Thinking I could make a batch empy it in to a bag and store it in the freezer and add 2 batches to the plunge bath. Thoughts?

Use this as a space heater because essentially, it's a heat pump. Throw away the ice outside during cold winters. It's more efficient.
Think outside the box.
This becomes only marginally more efficient than a space heater, at the cost of running wager. You're relying on tap water to contain enough heat to make this more efficient than a regular space heater.
Heat pumps move heat. You're pouring in a few cups of water at most into one of these...how many calories do you expect room temperature (at best) to have per unit of volume?

The problem I have with owning one like I do is you can't just leave it going 24/7 or it's just in a constant state of making ice. It'll just melt and freeze over and over.

I haven't owned one of these machines since 2013. Has the technology gotten any better? Back then these would constantly run into mold issues inside the crevices you can't reach to clean, or the tubing would develop mold. And yes, this is coming from the guy who used citric acid once a week to make "slush" ice as instructed by the manual for sanitizing / descaling. It didn't matter cause water would seep into the motor compartment and mess something up.
Been looking to get another one out of sheer curiosity, but even the touted Opal machine seems pretty hit or miss and is quite pricey.

I've done it the ice cube way, but man that's a lot of work. This ice maker won't make near enough for you to do daily ice baths unless you have a grizzly cooler some other well insulated ice bath with a lid. I used to fill sand bags with ice from 3 different ice makers and stored them in a 7ft^3 chest freezer and with jugs and blocks of ice. Two of the ice makers were in freezers, so not much work. One was 26#/day igloo countertop like this one. Constant refilling the machine with water and collecting ice, a PITA, so much work. Getting a a tub full of ambient water to cold plunge temps required 7ft^3 of ice. A lot of work making and moving all that ice so I ended up not plunging often.
Since then I have insulated my rubbermaid 100 gallon stock tank and built an insulated lid for it so it takes way less ice. Now I just freeze gallon jugs of water in my 7ft^3 chest freezer. About a gallon jug a day of ice in the winter and 2 gallon jugs in the summer keeps it in the 10-13 C range that I like.
tldr for about the same price as this machine you can buy a 7ft^3 chest freezer and make jug or block ice.

Buy a used ice machine off Craigslist or proxibid or hibid. Way better to install it and just grab a few buckets of ice out of the hopper when you're ready

It auto shuts down when full till you empty the ice bin and then starts up again automatically

I'd venture to say no, since Opal is the standard for high quality nugget ice.
Here is the New York Times top pick from October 2023 for $129.
