There has been a few water leak sensors on sale but I still don't know what to buy. Anything that works with Home Assistant and has battery that lasts at least for a couple of years?

The more electronics it will have the shorter battery life. Wifi is needed to chat with Alexa/homekit. This one is basic but you need to be at home when it goes off.

I think most people have had good luck with Govee if you just want a stand alone solution. It's what I have as well. Pretty cheap esp. when there's a sale, and uses regular AA or AAA batteries, and they last a long time, at least 2-3 years or so. I've gotten phone notifications pretty reliably when it detects water. Fairly sensitive too. Downside is probably it's Chinese company and it only runs on the old 2.4 ghz for WiFi. But I put most of the IoT stuff on its own private guest router.

I was looking at the govee ones 5054 I believe and it doesn't need a hub it seems but I think its not supported by Home Assistant.

According to the product page, this water leak alarm detector offers a 5-year total lifespan and runs on 2 replaceable AAA batteries (included) that last 3 years; a low battery alert emits an audible beep and flashing red LED to remind you to replace the batteries.

if you have cameras indoor or other that listen, you don't need wifi on a water sensor. I don't have smart camera's inside my home but outside garage other areas i have cameras with mic, and they pickup unusual noise from all sorta of non wifi devices (fridge , freezer alarms, flood, fire, etc)

The less LoT and especially crappy phone apps the better. i like to rely on one for noise, "sound detected" , view listen oh that's the fridge , water, etc alarm.

Course right without that at least you'd need to be home. I don't use alexa listening devices either but they can monitor as well for fire alarms, and such sure they can monitor these,.

I think you are right and you can setup an Alexa monitoring alert
