Another use case would be recording background sound or foley. I'd recommend attaching it to a tripod for the former and a gorilla pod or pistol grip for the latter. (anything to dampen handling sound, which the H6 will most certainly pick up).
One more use case would be voice-over. Be sure to use the foam filter to cover the XY mics. make sure the mics are 5-6 inches away from your mouth, and speak across the mic rather than into it. Only attempt this in a controlled space. A clothes closet works well. The idea is to only record in a place that minimizes/absorbs room reflections. You could also throw a blanket over your head and the H6. I'd also recommend only using 1 microphone for this. Just turn off one channel in post-production.
Just some thoughts. It really is a swiss army knife. So get creative.

I tend to put the mic a little further away, as otherwise the recordings sound too dry. Any advice appreciated
I have a matched pair of Oktavas that sound amazing.

Here's an even cheaper offering... No idea how good they are, but they are certainly well-reviewed on Sweetwater.

Equally important to the mics themselves would be mic placement. Lots of YouTube videos on how to record with various mic techniques. Here's one... https://www.youtube.com/watch?v=4fPWFAF
I'd use the recording service by the conservatory. I'm sure whatever they are using is acoustically tailored to the room. And that's a very cheap rate.
