When shopping for a standing rib roast this year please don't get confused between most standing ribs or prime rib and Prime grade beef. ( Not the same )

Most standing ribs or prime rib as per the name ( Prime rib )
Are 1) about 50% Choice Grade beef or or a lesser percentage 2) Select Grade beef and - not prime grade.

1) The large end of the rib roast will typically be more flavorful but will have more fat and be more tender.
The large end of the rib is pretty much connected to the Chuck

2) The small end is leaner slightly less tender and is connected to the New York strip.

3) A whole standing rib roast is typically seven ribs

4) use a meat thermometer and please do not overcook your rib roast or it'll be tough

5) If you're going to have a lot of people over make sure you get a small jar of horseradish ( a few people will enjoy )

USDA-graded beef sold at the retail level is Prime, Choice, and Select. Lower grades (Standard, Commercial, Utility, Cutter, and Canner) are mainly ground or used in processed meat products.

Raley's, Bel-Air and Nob Hill stores Northern California standing rib eye roast $5.97 a pound ( USDA Choice ) Butcherboy approved - they will also custom cut for you for example take the bone off and tie it back.

I guess if you have to have a rib roast, and that's all you can afford, select is better than nothing. But I'd rather spend a few more bucks and get at least choice grade.

I agree atleast where I'm at Publix has choice for $6.95 I went and bought the biggest one they had and I'm gonna slice most of it into steaks and then have part of it for Christmas dinner.

When grade isn't listed, is "select" implied? I've seen USDA Select being explicitly labeled on some cuts sometimes.

That is usually correct. I usually need to marinate/tenderize (and maybe with some added fat with cuts like these if they don't have much marbling)

This is likely Select since that's what the Albertsons affiliates in Texas have on sale. Randalls has Choice for $8.99 and Prime for $12.99 as well.
