You could buy a bunch of these and cash them in one at a time, that would be the only way.
As long as it is expired, it will work. Doesn't matter if you had it in the past or not. If you both play on the same Xbox you will both get the ultimate benefits regardless of who is signed up. Can even be different xbox's as long as whoever signs up for ultimate has the other Xbox as their "home" xbox. The $1 trial might be ymmv though.
