I was about to purchase and noticed a few things that held me back:
1. No m.2 slot, only SSD. This is a significant bottleneck
2. No USB C connector
3. Only has wifi 5 (we are almost at wifi 7!)

Some other things that are normal but good to know for this price range, RAM is soldered on and the fan seems like it could be quieter.

For a few bucks more you can go with several other vendors that don't have the first 3 limitations noted above. I for one think the $20-$30 more could get you a better N100. I see why it's on sale.

I would argue that really only the USB-C thing is going to have any noticeable affect for a vast majority of people, and that calling the lack of an m.2 slot a "significant bottleneck" is incorrect.

During normal PC usage including boot and application start the bottleneck isn't SSD speed, it's seek latency, which is similar between PCIE ssds and even the very old now seeming SATA ssds. Difference in boot to windows is literally like two seconds.

Don't let the throughput numbers fool you. On that or the WiFi technology. WiFi 5 is totally fine for pretty much anything anyone would wanna do with this box. Don't be fooled into thinking you need stuff that you don't.

Yes, they are. The N100 and N95. I have a similar PC running Plex just fine. Unless you're steaming 80 gb blue ray files you should be fine with any of these N100 or 95 PCs.
Actually if you are streaming Blu-ray w/ HEVC or H.264 most modern clients will just go direct unless you have a 4k UHD blu-ray then it may need to transcode. Any 1080p blu ray is not an issue.

Since the N95/100 have a 12th gen IME (media engine) that is not a problem at all if you need to go from say 4k to 1080p or lower. It can even retain the HDR metadata (I have done this). I would say it can easily do 3-4 at the same time. I have done 3 just to test, but all of my clients go direct (GCCtv, Onn 4k, Fire 4k max) so I never transcode unless on mobile and that is only the kids. Zero issue.

If you are doing such operations, you should really have your Plex/JF server connected to wired ethernet, not wifi.

N series does not support dual-channel RAM access, right? How much does that translate into real world performance compared to dual channel?
If you are looking for low power server you are comparing this to say an ARM competition (Rpi) and this thing wipes the floor with it. For an office/web browsing you will be OK.

The technical answer it's half-ish but for normal knowledge work or non computational work you are looking at 5-10% slower than an i3 version with proper DC but at 2x the cost or more.

For $150 you are talking a terminal or a docker/low power HTPC.

Intel specifically gimped these not to overlap w/ their i-series. The N-305 is a pretty powerful E-core beast and can power some serious workloads and routers/SPI applications.

For folks looking to purchase this and use it as a Plex server, why not invest in an Nvidia shield? I have the 2015 nvidia shield with a built-in 500 gig hard drive and it works really well as a Plex server among other things. I also have the 2019 Nvidia shield pro to which I attached an external SSD drive, and that works great since it also includes Dolby vision. Both of these are in the sub 200 range (used). I love the Nvidia shield.

I was considering this as a stand alone pc for just TV. But I think I should probably look into a stick pc. Any suggestions there?

For $30 more you can get a DDR5 (Crucial) and no-name m.2 NVMe wtih WiFi 6; BT 5.2 and 2 2.5GBE LAN ports (TrigKey B0CLNVNCB9). I purchased it during BF (for $160 + taxes) and running OMV / Plex without any issues

Would this work as a Plex server for transcoding?
Yes.

Well, depends on how many streams you're doing. Can handle 2-3 streams easily, maybe more. For personal use, this is well more than enough.

I've got the beelink N100, it's great. It's PERFECT for a home server.

If you're sending out 10-12 streams to family and friends, it may not be able to handle it if they all need transcoding. But then...tell them to get with the times.

There are much better mini PCs out there for around this same price. I would completely avoid the N100 series based minis.
Nothing wrong with N100, they can do 4k 60fps video streaming with ease, and work great as a Steam Link box, especially if you get one with quality bluetooth for gamepads. I don't know about this particular brand, but N100's are fine where you want a far better streaming tool than a Fire Stick, but will only use other software lightly, but you still want that capability. Occasionally I code with mine, VS Code runs like a champ on it, on a big 4k screen.

Because the Shield is ARM based, not x86, for starters.

Yes, the Shield can run Plex, but it can't run a lot of the software a typical PC user would be comfortable installing and using.

Moreover, the transcoding capabilities in these mini PCs is far better than what the Shield can handle and are much newer processors in general.

Possibly a better deal for some. 159 with $30 coupon. 2.5gbit LAN, WiFi 6, and 12gb LPDDR5 (less than the 16gb, but significantly faster)
