I did a bit of research recently because I had the same question. Apparently, it does work. Baking soda even absorbs some VOCs?! I still don't really believe it, but the online research I found looked legit.

I've heard of folks using baking soda to clean new furniture that was off-gassing, supposedly it works well

$0.50 a pop from the last deal. took them almost 3 months to ship. but they did ship.
