I buy in bulk when Lavazza bags go on sale. I've had a bag that was 9 months past the manufacture date (was 2 months past when it arrived from Amazon). Tasted as good as the bags that that were 2 months past that arrived as I was finishing the 9-month bag.
I have used fresh roasted coffee too.
I think the bigger issue is not the bean, but the machine. That could be a bumper sticker
I have a profitec 700 (upgraded from the 600) and a eureka mignon (with 65mm burrs).
Bad coffee tastes bad. But consistently bad. Good coffee always tastes good.
With lower quality hardware, espresso quality floats between good and bad when using good coffee. It's a crap shoot. An entire bag, or more, could taste bad. The the coffee gets the blame.
Three people tasted that coffee. I doubt all of us have bad taste bud :-)
Just information. I didn't want to be argumentative but they could be various reasons of why we experience what we experience.

Happy Mug is a great place to get green beans. Almost everything is under $7 a pound and they are my go to. They have plenty of variety. Luckily for me they're in my hometown Erie, PA and I can just run down and pick them up, but they're shipping is fair too. I don't know of any other less expensive source for quality beans. https://happymugcoffee.

The only shortcoming of the Javastarr is it can only do 4 ounces at a time, but I set it in my garage, press a button and walk away. Around 20 minutes later, they're done and cooled off. Even on the dark setting, it does more of a medium than dark, but you can do a second round of roasting and get a true dark roast out of it that's excellent. It's a pretty simple but amazing solution for espresso. Every couple/few days I roast 4 more ounces and add them to the hopper. I've been doing this for several months now. The best part is the chaff collection, especially compared to the "Stir Crazy" types of roasters. The only advantage of those roasters is they can do a much larger batch, but I prefer the easier chaff collecting and timed cycle of the Javastarr.

As for nitrogen flush - sure, you can see that that bag is compressed. But put that in a shelf and after 6 months pack will inflate because coffee releases gasses naturally.
In any case, I consider 6 months old Lavazza stale, regardless of what they say on best before date.

I'm curious as to which espresso machine and grinder you have. It might help me understand more where you are coming from
For vast majority of people, this is a great deal on decent coffee. If you are a snob that loves local roaster beans that are less than 2 weeks old, you probably shouldn't be shopping for Lavazza anyway.
I have a superautomatic that I use in the mornings when things are hectic, and I've had this specific variety of Lavazza many times. It produces good enough espresso. I also have a Niche Zero and Bambino Plus that I like to mess around with in the afternoon and late nights, for which I will use better/fresher beans and will produce much better espresso. Point is one size does not need to fit all, and this is a great price for a good product that fits a lot of people.
