No. Existing bookings count for Hyatt promotions. Southwest is the only organization I know that requires booking after registering.

Will I have to book AFTER registration? I already booked a 2 week stay for that period, I assume I just need to register, but won't need to cancel and rebook to earn these points, right?

No. Existing bookings count for Hyatt promotions. Southwest is the only organization I know that requires booking after registering.

5k is the min for one night.

Id say I personally value 3k pts around $60 (2c/pp) but my personal best was at 6c/pp at Andaz Maui. So I guess it can be worth more than $60
