Read the Steam Deck reports, this is the best resource I'd say for Steam Deck users. Look into Decky Loader + protondb plugin as well for when you're looking to install a game you already own.
Short answer: low everything 40 fps with dips seems okay.

Here's some reports with me stretching my OLED for what I remember
Thief (2014) could hit 60 fps
Assassin's Creed Odyssey (2018) not stable 60 with low everything and 70% internal resolution
Immortals Fenyx Rising (2022; arguably not AAA fidelity for the time) I'd call it a solid enough 60, not ideal but wasn't as painful to play as other games
Death Stranding Director's Cut (2019/2022) First boss encounter I was probably holding 40 fps on low everything, FSR 2.0 on balanced
Destroy All Human 2 (2022; not AAA) was hard to run, can't remember details
Star Wars Squadrons (2020) was actually a good time.
For people saying aiming for 60 on handheld is foolish, I'd mostly agree but I have the OLED and I can easily get 2 hours with ACdyssey with 60 Hz refresh (but not generating 60 fps) and CPU + GPU utilization quite close to max.
I think it's still wonky… it seems washed out a bit…
It's not terrible but I need to do my tweaking to see if I can get a better pic. This is on a Samsung G7 monitor so nothing super high in the HDR capabilities
