If you want fresh, high-quality vanilla beans and extract, there will likely be a premium. I generally worry about stuff that can spoil or expire on Amazon. I'd recommend saffron.com. They sell saffron, vanilla, and a few other related items. They're pricey, but I've gotten excellent quality every time I've ordered.

Vodka makes a pure vanilla tasting extract. If you like a sweeter, more complex taste use Bourbon and if you want a really sweet vanilla used a brown rum. We make all 3 three and use each for different purposes. Like others have said, make it and let it sit in your pantry for awhile. We gently shake the bottle once a month or so. Also, we usually refill the same bottle/bean once with the alcohol of choice to stretch bean use. After that one refill, it is not as good. Been doing this about 15+ years now.

I use a Facebook group, Indri's Vanilla Bean group. They run group buys all the time. Beans have always been fantastic.

I think the wife got in on some and we have some beans sitting in vodka at the moment for making our own extract. The smell alone is amazing. Can't wait to actually try it in cooking/baking

Can you just chop or eat the beans as is? Does it taste weird this way?

You can do anything once. But usually you soak them in your choice of alcohol (vodka, bourbon, whiskey) and let the flavor come out of the bean in it.

Slofoodgroup does have very nice beans. I have been ordering from them for several years and always nice quality at a fair price. Good black peppercorns from them too.
