Didn't see any wording about excluding gift cards
If you just reload your balance / gift card on the app it the charge processes as Starbucks, I just did it. I added $35 to ensure I'd receive the full $4.50 amount, should meet terms for an easy credit.

Would like to know this as well. Thanks in advance!
I mean it's posted as Starbucks app transaction on my account but typically with chase it will take a week or so to show redeemed. I can't imagine any reason it wouldn't get the 15% back, seems clear. I'll post once it's official but I know the offer expires in a few days.
