Lowercase g or m is bit, upper case G or M is in bytes

One byte is 8 (or 10 depending on the usage) bits

USB 3.1 Gen 1 = 5gbit = 666Mbytes
USB 3.1 Gen 2 = 10gbit = 1.25Gbytes

This is only the maximum (Theoretical) bus transfer speed.

The main answer is, the USB thumb drive itself has a controller and/or flash memory that can only read/write at up to a certain speed, and is the primary speed limit.

In dumb terms, a car can have a 240mph speedometer, but is only actually capable of going 120mph on its own.

These drives technically can reach the advertised speeds but only initially. After that, they'll gradually throttle down because of the heat it generates during use. Ultimately, it'll only achieve a quarter of the advertised speeds over a long duration in my experience.

I've been using this since March 2023 in my Tesla, for an upgrade over the 128GB. Appears to be identical, seems like Tesla is using this as the OE provider. Not sure if the internals of the drive have any different specifications for Tesla, but externally the drive looks identical.

Anyway, I've been using it for a year now with no issues. Also, the 256GB gives a lot more recording space for security mode and dash cams.

You will have to format the drive first. On the touchscreen: Controls > Safety > Format USB Drive

This is why I'm a huge fan of these nvme usb adapters and you can pickup a cheap nvme drive somewhere, even eBay and have a 300-900 megabytes per second thumb drive on steroids.

This is the one I'm using with my spare sk hynix 500gb drive

That's incorrect. Capital MB = megabytes. This drive says 400 megabytes per second. Not megabits.

How do you avoid getting fakes from Amazon The last one I got was about quarter of the capacity

400 megaBYTES per seconds, not megaBITS. So it is actually quite fast.
