Instead of buying in bulk, some people are willing to pay 2x or even 3x the price, just for the 'convenience' of a company breaking up one package into multiple smaller packages.

Instant oats are rolled oats. They are just oats processed differently. I prefer steel cut oats, but they take about 45 minutes to cook, so not near as convenient.

Part of the expense here is the organic growing which results in decreased crop yields. Usually I don't care much about organic, especially when a fruit has a peel that I won't eat, but there might be reason to go organic for oats.
Recent studies have found high levels of chlormequat (thought to be a potential reproductive disruptor) and glyphosate (the Roundup chemical strongly linked to cancer) on oat products. Chlormequat is added to get the oats to stand up where they are easier to harvest, and glyphosate is for weed control.
There were some organic products contaminated, but the organic products were far less likely to contain the excessive levels of these compounds. I have a garden, and I use glyphosate around my property, but I'd never spray Roundup on a food that was near harvest. Oat suppliers do.

I've got one of those cool micom rice cookers with a porridge setting that works great. I cook them in milk which gets the vent a little nasty, but it's easy enough to clean.
