The first review notes that the steel will get extremely hot. Having just been gifted a scar from a similar single layer electric kettle, I would only buy at least double walled now, especially if you have kids. The amount of heat by just brushing against it for a milisec was shocking.

For that use a cheaper unit without the gooseneck will serve you better. You don't need the accurate pour for tea and you'll get faster pour when cooking versus the gooseneck.

I am and always will be confused by this comment. The roasting process of the beans reaches temps way higher than boiling water. The pour over community seems really hung up on being able to control water temps... but in my opinion its not necessary in the slightest. Maybe i'm missing some key details here. As someone who uses the Fellow EKG with temp control, its not something I ever use. Just push it to boiling and go from there. You lose the control immediately when the water hits the air anyway too. Maybe could you could help me understand why this matters.

Until last week I always boiled water in the microwave and made tea. Then I bought the Govee tea kettle that has temperature controls and it has settings for different teas and coffee (most tea is 180 whereas coffee is 210). I thought it was a gimmick, but it's not. The tea tastes smoother and better when it's brewed at the right temperature. You can definitely just buy a cheaper pot and let it cool down, etc. It's up to you. But you really can tell the difference in flavor when you use the right temperature.

Coffee is ideally brewed between 195-205°F, Green Tea requires lower temperatures, and Black Tea requires high temperatures, but lower than coffee.

I would hold out for one with a keep warm feature. Nothing more annoying than the kettle shutting off and cooling down before you get to it.

I can think of at least a few more annoying things, like stepping in spilled water in the kitchen with fresh socks, biting your cheek and getting a canker sore, hitting every red light on the way to work, etc

Let it sit for about 10 minutes and the temp should be more ideal for black tea. Less bitter. 195 degrees is best.

I have a temp control kettle because I drink different types of teas. And quick boil for cooking.

I have one of these. Anyone saying temp control is important. Temp goes down as soon as you put it in a mug or tea pot (if you don't preheat that item). I just boil water, put it in a mug without the tea leaves. Take my instant read thermometer add a little filtered water to get temp right, then add my tea. Easy peasy.

Having a multi purpose kettle is important for some families; coffee and various forms of tea, as well as hot chocolate for kids, all can require different temperature settings.
