What makes these bulbs worth 3-4x the cost of other run of the mill smart bulbs that I can control via Bluetooth, zwave, or zigbee?

At least for me the reliability is what I love. Power outages, network outages etc and I've never had to reset a single bulb or work on functionality, it's just a setup once and use it like normal lighting without thinking about it. Hands down the only smart product I've used that has required almost zero tinkering after the fact other than customizing the experience.

brightness and dimming level are usually a step above everyone else and these are the gold standard for the zigbee protocol. they're just rock solid.

$40/bulb still a bit on the high side but maybe the days of $20-25/bulb is a thing of the past.

The accessories that these bulbs support are also incredible. Namely the Lutron Auroras. This sold me on huez as my wifi bulbs were so finicky. I wanted the smart functionality whilst also being able to use switches, these are the best of both worlds
