You don't put the plant in the olla pot. You put water in the olla pot next to a plant you want to keep watered. Terra cotta pots like this are not water proof, they will slowly drain water to the soil. This encourages plant roots to reach down and toward your olla pot and makes good use of water. They've been used like this for a very long time.

You can easily DIY your own by having 2 regular terra-cotta pots sealed together. You can find videos on YouTube.

As far as time delay watering devices, this seems pretty cool and a lot less intrusive or complex than a soaker hose. But those little glass bulbs seem a lot easier for potted plants β€” this one just takes up space, probably better for a large planter box or in ground.

This seems like...a cool gimmick. It's too much bother than just setting a reminder to water your plants. But it seems like a fun/interesting thing to do especially with your kids.

How is works is that the bottle has micro pores through which water leeches out providing moisture to the soil.

I had a Terra cotta water dispenser a while back and it was so so good. It'd cool the water many degrees below room temperature and soothe a dry throat on a hot summer day. I've never liked ref cooled water and that dispenser was the perfect thing.

Same application, water comes out of the micro pores but then it evaporates cooling the liquid inside. I think I'll have one made by my local artisanal pottery place.
