As something of a middle-ground between comments above, I use plastic boards like these when I really want to be able to run them through the dishwasher afterward-- prepping raw chicken, pork, etc.

But I use wood (nice heavy end-grain board, or cheapo bamboo) for basically anything else.

The size assortment on this set looks nice but I'm turned off by the "flimsy" comment above.
