Low sodium would be great. These have 40% of your daily sodium in 1 can!

I agree. I didn't know Costco ever sold it but I haven't seen it there in the 4 or so years I've been a member. It is irksome that deals for the regular version show up fairly often and the Costco price is also good. My Amazon account shows I bought a deal for the low sodium version in January 2020 and I have not seen any good deal since.

Sodium can be used as a preservative in processed canned foods. Maybe less sodium version has less shelf life meaning higher operating cost to properly store in a temp stable environment?..

Not likely, the lower sodium still has plenty, just not 50% of a total days intake. Maybe it just does not sell as well, but after drinking both versions I see little difference in actual taste, and I think most people would prefer to drink the healthier version if offered the opportunity.
