Edit: I've personally traded in several devices (phones and watch) in Mountain View. In all instances they physically took the device and gave me credit instantly. I can't personally vouch for the other stores.

I probably won't open up the tablet box until I actually see the trade in credit on my credit card since I do NOT want a google store credit of $399.
Edit: I'll answer my own question...on this Google page discussing trade in credits, it says this:
Important: It may take up to 14 business days for any credits to show up on your credit card.
If the post-inspection value of your trade-in device is the same as the estimated value:
You'll get a credit to the form of payment used to buy your new device.
If the value of your trade-in credit is more than the cost of your new Pixel device excluding taxes, you'll get the excess amount as a Google Store credit.
