I have a hardback copy of this we got probably 50 years ago for making a donation to the local PBS station. Made a few recipes, most notably the French onion soup which called for a lot of butter and was really, really good.

My instructor used this book when I was in culinary school. A lot of the recipes are outdated to modern tastes, but the knowledge and techniques still apply.

Personally I feel in 2024 that videos are a much better way to learn to cook.

The book that got me into complex cooking. Must buy if you want to elevate your weekend dinners. I usually get praises from guests for each dish being better than restaurant versions. Only catch is that most entrees are not quick meals; can take hours to achieve the right results.
