why do people think these phones are worth 500$? That's a lot considering how many issues the pixel 6-8 have had.

Of course not. But Android is inherently secure, apps are sandboxed, and apps have their own updates.

I use Google Workspace with Google Voice on my Motorola Edge 30 Fusion. The Google Voice app works fine, but Google Voice and Android Auto don't work well together. Any reason to think that if I used a Google Pixel I would have better luck?
