I remember thinking that if this unit were to ever drop to $1500, I'd be all over it. Now, I'm going to wait and see how much further all these Lifepo units will drop.
Not if you have solar panels.
But that deal is a really sketchy no-name brand, whereas Anker is renowned.

Why the wait?
It was weird because I was looking at these about 20 hours ago, 10 hours before you posted. I am not in a position that I can install a whole house generator, that runs off natural gas. I'm hesitant to buy a generator that runs off gasoline in the event that no one has power... But I still need to power my refrigerator, chest freezer? (Both? One? Anyways...) Also, potentially fans.

You could look at a tri-fuel generator that runs on NG and LP, in addition to gasoline. I had a power inlet installed (which includes a breaker and safety lockout on mains) next to a system propane connection that is primarily for my grill. When the power goes out for an extended period, I roll out the generator, plug it into the inlet, disconnect the grill (I have a rapid disconnect connector installed), connect the generator, fire it up with battery electric start, and I'm good to power most all of my electric demand. I have an PowerBack alarm that sounds when power is restored.

If it's going to be stationary it might be worth looking into buying your own but honestly depends on a lot of factors. The primary one is are you skilled at electrical and such. There are whole home options by both Anker and ecoflow as well but they are more expensive. If you go over 3kw I believe you can get a 30% tax credit.

I'm watching a lot of videos on YouTube about these guys attaching a battery and inverter to a hand cart to clone one of these. I think I can do it.

and then I'll need to get an electrician to hack my current solar on my roof to link to these if I ever want to go off grid one day

if I already got my 30% rebate for solar, can I do it again for the battery?

Depends on your goals, this has more features like an rv style plug etc but if you don't need those and like jackery then it might not matter, also this has 5 year warranty and not sure about jackery

Yes, you need to plan a way to recharge power station. solar, gas generator or car alternator. I have Delta 2 as AC inverter supplying backup for 4 AC lines ( fridges, home Internet, lights, computers) and few spare 1k lifepo4 from trolling motor, gas generator, and 500W car alternator as options to quickly recharge delta 2. I have no solar and I have no space to install solar panels field .
