Great. That works!
Highly recommend starting with something more game-like, such as Forza for example, and then raising the complexity with something like Assetto Corsa (as well as AC: Competizione, and eventually Corsa 2 - allegedly coming later this year). It has virtually unlimited replayability with the amount of tracks (and cities/street driving) and cars that it supports, and is very well made - notwithstanding the age.
Then, if you are really into immersion, Assetto Corsa supports VR, which as long as you don't get quickly sea sick is an incredible experience (I use it with Valve Index), especially if you enjoy cars.
You've got a couple of options for adapters, the Brook Ras1ution (with a wired hori PS4 controller) which will add PS and Switch support, and the and the Drive Hub which is cheaper but doesn't do Switch.
