Mine just arrived, I looked under the hood, and there's a 2.5 SATA drive bay, and the cable is included. One 8GB DIMM & a free DIMM slot is cool and the AC class Wi-Fi can be easily upgraded to AX class.

Agreed! A lot of options for upgrades.

I already added a 2.5" SSD and also loosened the hinges - both of which were relatively easy to do!

Next step would be to add more RAM.
Do you have any recommendations on which RAM brands are reputable/reliable?
The user manual says that 2x8GB = 16GB configuration enable "dual channel"...any benefit to this configuration vs 1x8GB plus (adding a new) 1x16GB for a total of 24GB?
Also, speed for this model is 2666 MT/s. If I buy RAM with higher speeds, are they typically backwards compatible (automatically under-clocked)?

I haven't built a computer since the mid 2000's.... sorry for the newbie questions!

12th gen intel will run 3200mhz ddr4 ram. You should check what it shipped with. Mine arrived with 8gb kingston 3200mhz ddr4 despite the 2666 shown on the product page. Adding 16gb for 24gb total would give the best performance bump IMO
