Any 3D printer would be good for him he would learn a ton and it might get his interest into design and engineering. Bambu units (never used one) are well known to be fuss free so he shouldn't have any issues or get discouraged. Obviously you learn more from a crappy unit you have to keep fixing (ender 3 and clones) but he won't learn anything if he gives up and there is a good chance he does with those.
Thank you for this information, I really appreciate it!

To start with Bambu, what should I get? I'm planning on the x1c with ams. What spools, beds, etc do I need?

Wish they had a sale on the X1E. I print mostly in ABS and would love a heated enclosure to reduce warping.

We've never had a 3D printer before but my 14yr old son has been asking for one. Do you think this would be good for him? I've read that these printers are really good.
Absolutely

As someone who only has watched a bunch of printer reviews (but those get dated quickly especially with price comparisons since CV19 and current prices now), would a 3d printing expert recommend the Sovol SV06+ or the A1 ?
From what I understand, the benefits of the sv06 are the all-metal nozzle end allowing for higher temp prints, auto bed leveling, and I believe the top thing levels itself too from the printer maxing out height on both sides of the towers. Also it appears that if there's a power outage (spool ends?) its good for that as well. Another big benefit imo of the sv06 is the widespread use of it so troubleshooting would be easier and settings more common, I'd imagine.
I have to do research in to the a1 but if anyone knows the big benefit to either one, I'd be thankful for the info.

A1. Bambu is on an entirely different planet from other 3D printing companies with regard to quality and ease of use.

Plus then you can add an AMS Lite when you feel like it for easy multicolor prints.

Others have answered but I'll come in too. I started off with an ender 3v2 knowing full well I was kicking off a new hobby. Ran it for 3 years, loved it, learned a ton and still have it. Got tired of the fiddling eventually and got in on the last big Bambu sale with a P1S. I'll never look back. Now I can focus on the purpose and creation aspects of the hobby without the frustrations. It hasn't been perfect - I just had a print fail this morning, but it has changed the whole hobby for me.

Would the A1 mini suffice for someone looking into learning and printing spare parts (nothing big) or should I get the full size A1? TY

If you don't want to do anything big then the Mini will suffice. But your ambition may grow once you have the printer and you may regret not having a larger print area.

I bought a P1P and I regret not buying the AMS combo, for example.

I bought an Ender 3s1 (I think) last summer when they were dirt cheap at Microcenter. My then 12 yo had been asking for one for a while. Spent way more in filament than what I paid for the printer lol. It didn't take him very long to want a Bambu with AMS.

Still cheaper and better than video games.

Waiting for Bambu to release a Prusa XL competitor! Holding out despite these tempting prices!
