To any of you culinary aficionados out there, any suggestions on what to do with all of the extra canned paste you don't use for a recipe? I have never been able to use a whole can and throw out too much.

We have a couple of things we do.

First, planning out meals so that if you don't use the whole can the first night, but can use it on a subsequent night helps.

If we get lazy and don't plan (so...just about every time, for us), we have these little Rubbermaid brand tubs. They're really small, like half the size of one of these cans. They seal well and as long as you don't forget they exist will keep the paste okay for a longer period.

Finally - you can freeze it in ice cube trays, and bag it up (but that requires having a bit of it to cube and bag), or just use one of the little plastic tubs I mentioned above and toss it in the freezer instead of the fridge. The small amounts thaw quickly so you don't need to take it out of your freezer before you're ready for use.

You can make tomato juice out of it. Just add water, a little salt and citric acid if you happen to have any laying around and give it a good shake. There's plenty of info on the Internet about this.

Put leftover paste in plastic snack bag, squeeze out all air, seal, freeze.

Make chili, sloppy joes, meat sauce all the time. Paste gives all of these a richer taste. Always keep on hand.

all tomato paste is is tomato sauce that has had half of the water removed.

6 oz of tomato paste is exactly equivalent to 12 oz of tomato sauce.

don't worry about the origin of this information, I've already crunched the numbers a long time ago because I would never spend a single fraction of a cent more than I had to on anything including tomato sauce.

So, if you use tomato sauce, you can just use this paste as tomato sauce via a 1:1 ratio of tomato paste to water.

Cut small squares of parchment or wax paper and flatten a tablespoon of tomato paste between each layer of paper and freeze in a ziplock bag.
