For better security, there are certain protocols that need to be used. Those protocols should be secured protocols, meaning the traffic from Point A to Point B (end to end) is encrypted so no one can intercept the packets. Using unencrypted protocols is risky since an attacker might steal your info or listen to your conversations( in this case).
WhatsApp for instance uses end to end encryption like they advertise.
In this case, they are claiming that Nord VPN are using a specific port which is used for unencrypted phone calls, making it possible to listen to your phone calls. Similar when you visit a website and it's using port 80 (HTTP) you see a certificate error which means it's not secured. This is why you always make sure the website have a valid certificate and it's using HTTPS (Port 443).
