I used rub for my briskets and ribs for a couple of decades. A few years back I was watching the BBQ with Franklin series, all that he uses is extra coarse black pepper and coarse ground salt at about a 50/50 ratio. Franklin BBQ is some of the highest rated BBQ in Texas. I gave this method a try and never switched back, its fantastic. Not to mention cheap compared to the custom rubs I was using prior. I like about 35% salt/65% pepper. Sprinkle it on liberally and pat it in then let it sit for a 30 - 60 min. Friends and family have told me a number of times that the ribs I've made them are at the top of the list of the best they've ever had.
I'll use seasonings like the Weber in this thread for burgers on the gas grill.

So 2/3 course ground pepper, 1/3 kosher salt, and nothing more? Do you use this on all meats? Sounds like this is a better rub for beef than pork but I'd be willing to give it a try!
