You are talking about new card bonus vs existing card offer on Amex. That's a huge difference. You don't need to apply for a new card and get a credit pull to get the Amex offer.

Could be anywhere from 60$ to $600 depending on if you redeem for cash or transfer it for reward travel.

Better offers out there.
Some Banks offer $200-250 with a new Visa/MC if you spend $1000-1500 in the first 3 months.

Yes, I agree.
My MC CitiBank offers 250,000 reward points "$250 value" when you spend $1000 or more. You can redeem the points for gift cards like amazon or Visa, etc.

On average, Amex MR points should be worth on average ~$0.02 each, so you're right that $200 is more realistic. I guess every now and then there might be a screaming good airline award chart gem that could make it way more than that, but I've never found one personally for any trip I've priced out.
