Also to note the AppleCare is only valid for as long as you pay the yearly $200 plan, if you stop paying your warranty stops.
But if you get yearly AppleCare that's perpetual.
Might consider a combination of a MacBook Air (depending on how intensive the computing needs are) and an Ipad with pen if they want to stay in the Apple environment.

And even then, I look at the price... steep AF—I absolutely love Macs, but can't justify these prices.

I can't believe there isn't a revolution among Apple users over this treachery. It's pure greed, pure evil.
I don't get why people complain about Apple as if they're forced to purchase their products. Apple isn't a charity, they're a for-profit company that makes quality products that last much much longer than any of their counterparts. That's why 5 year old Apple products are still worth something while 5 year old windows machine are usually undesirable and almost worthless.
As an Apple user, I like how my OS has never been taken over by ransomware and how my 10 year old laptop still runs as fast as it did on day one. I'll gladly pay extra for reliable software and hardware. Piece of mind is worth way more than saving a relatively negligible amount of money.
1. The MacBook pros with Apple silicon are extremely powerful
2. They are power efficient and don't throttle even when unplugged. Most windows laptops will drain a ton of battery/throttle not plugged in
3. Build quality is MUCH better
If you're willing to sacrifice in one o those areas go with a cheaper laptop. If not then go with a MacBook and pay more. Also there are a lot of nice little things that work so well when you synergize with other Apple products
