You're likely going to be using this laptop for a long time and having a peace of mind and less stress is often worth the extra money.
Also I generally wait for sales so I feel like the price is actually good at that point.
Yes, it's expensive, but it does provide features you don't see from those other 8GB devices. It also sips energy; it only consumes ~20W while encoding. Its processing power is also much greater than those "few hundred" dollar laptops.
A laptop that lasts 7 years with relatively no problems is a great buy at this price
Also, laptops priced similarly to Apple's tend to perform quite well. They might not be as efficient as M1+ MacBooks, but they perform very well, and they allow users to upgrade RAM and storage down the line.
A person who used to work at Ford once told me that Ford was a financial company that happened to sell cars. In the same vein, Apple is a marketing company that happens to sell computers.
Build quality used to be a thing at Apple. Nowadays, it's about bling and the appearance of quality—stick an aluminum slab on it and call it a day. Don't get me wrong; MacBooks are still decent, and I love the way they look. But that's mostly what it's about—premium looks and feel and the appearance of quality. The bang for the buck here is disappointing at best.
MacBooks could be so much better, but planned obsolescence is Apple's ideology these days. Because the product lifespan you speak of is a serious, serious threat to new sales. I am still using a 2012 MBP, whose RAM and storage I upgraded myself, and sadly Apple likely regards my MBP's longevity not with pride but with disdain.
MacBook internals have serious points of failure, so that when they fail, they fail, forcing one to buy a new device by default. There is complete disregard for the consumer and the environment (zero upgradability; replacing faulty parts and other repairs are intentionally made to be a lot more difficult than they should be). There are quite a few media outlets that cover Apple's anticonsumer designs. Louis Rossmann, who owns a repair business, is a decent resource:
I feel for the Apple engineers who have indeed innovated and work hard every day to make a difference. I still love Apple computers, but they are just too expensive for what they offer (not just in terms of performance but also longevity).

unless you need to buy something now, I really think the best deal is to wait for a 32gb+ in the $1700 and below range, and a 16gb in the $1500 range. Not $2000.
I am often comfortably into the 19 - 20gb of memory usage, and I'm not even programming or doing anything intensive. That extra RAM has been really great instead of doing SSD swaps all th time, but I'm sure it's not that big of a deal in the broad scheme of things I suppose.
For example, I paid $1500 for an M1 Pro with 32GB of ram, $1611.41 after tax, and then about $1700 total after yearly AppleCare. I think it's a decent bargain, the original version was $2399 pre-tax in October of 2021. I saved $1000 when accounting for tax, and bought mine from here brand new.
My last MacBook made it 6 years (2017 - 2023).
I know these are expensive, but I hope to use this for at least 8 years. I feel like paying more, even if it's an Apple tax, will pay off in the long run.
The only thing I am uncertain of is the AppleCare...if I pay $99.99 every year, if I make it 8 years I could've just used that $800 for a new MacBook. I think it's kind of a rip off if you take care of your macbook. considering not renewing it.

I bought it with my M2 Ultra Studio because the downside risk is so high ($4000) and the cost is so low ($60/year? I forget. Even at $100/year it's a deal.)
