GMRS with typical walkie talkie only have a clear LOS of 5 miles-10 miles max. And that's really optimistic, typically it's 2-5 miles LOS with handheld. Even less so with foliage and mountains in the way. I believe CB should be able to go much further.
Inherent to the frequency range, you can go much further with CB although you do bring up a good point that at 4 watts, it's somewhat the same

how much of a difference do you really get with a regular CB vs walkie talkie? aren't they both 4 watts?

Yes, if you buy a CB (Citizens Band) radio for your truck, you will be able to listen to communications, and truckers do still use them. Here's a detailed look at your questions:
Listening to CB Radio
Truckers and CB Radios: While the use of CB radios has declined with the advent of cell phones and GPS, many truckers still use CB radios, especially for short-range communication, traffic updates, road conditions, and socializing. Channels 17 and 19 are popular among truckers for these purposes.
Other Users: Apart from truckers, CB radios are used by off-roaders, RVers, and hobbyists, so there's usually some activity to listen to, depending on your location.
