Bamboo is bad for cutting boards. The silica in the wood isn't the best for the edge of the knife.

FYI, bamboo cutting boards will dull your knives very fast if you're cutting on the board. They're fine for serving food on but not for actual meal prep.

Yes, although typically with most foods, it isn't so much the food that is dulling the knives as it is the cutting surface, which for most is either a glass or ceramic plate (rapidly dulls knives), or cutting board, which is less damaging to the cutting edge depending on material, but still the primary dulling agent.

This is why serrated blades stay sharper longer, as the pointed crests of the serrations make contact with the cutting surface, and the sharpened concave troughs do the cutting to the food. They eventually dull also, and require a special sharpener and technique to sharpen, although it isn't difficult with a bit of practice, and they take far longer to dull to a point where sharpening is required. They don't tend to make as accurate or as clean of cuts however as plain edged knives.

Glue is generally not safe but some of the glue is rated for food contact. The pieces of bamboo tend to be smaller so more glue is used. For this, plus the fact that these dull your knives faster, I would avoid bamboo for this purpose. You can get the other solid wood for similar price at Homegood/TJmaxx for comparable price. If you're compulsive regarding minimizing toxins, when the time comes to re-oiling/finishing, use Tung oil instead of the usual cheaper mineral oil.
