If you have decent knives or try to keep them sharp avoid bamboo. It's a VERY hard material, usually has sand in the glues that hold it together and will dull the hell out of your knives. Would use plastic before looking at bamboo, though nothing beats actual wood (upkeep can suck though).

You should avoid synthetic materials like plastic... unless you enjoy eating microplastics. Wood is the best option, but if you can't, most likely I would go with stainless steel, thick glass, stone, etc...

Bamboo boards made in China sketch me out. I have no factual support but presumably these boards are made from very thin pieces of bamboo compressed and glued together. no such thing as a bamboo slab. not trusting that the glue in these is safe.
Most hardwood boards are not 1 piece either but you can find boards with far less pieces and presumably far less glue made by a reputable manufacturer. You will of course pay more.
