I appreciate your opinion and I promise it is not my goal to change your mind. But your "simple economics" theory fails to take many simple factors into consideration. During the pandemic and after with supply issues the retailers raised prices. Yes, that was inflationary. However, when supply issues resolved, our beloved large manufacturers did not lower prices in line with the reduction of their costs. Economists refer to this a "greedflation" and as a result some grocery prices are way higher than the rate of inflation around 6%.

Again, I am not asking you to agree with me, I only want you to read-up a little more, and I encourage you NOT to get your info from social media.

No stores with pickup in my region. However, Kroger and affiliates have a digital coupon for $20 off your first pickup (or delivery) order of $75 [kroger.com]. Considering InstaCart is 10-25% more expensive + added fees of $1.99 or more (assuming you're not an IC+ member), it would probably end up the same price. Plus, if you use Kroger's own pickup, you can apply their digital coupons or even bring paper coupons to apply at pickup, so you'd save more than IC.
