Haven't worn these, but I have a gripe with any company that puts the bare minimum of Vibram rubber on the sole of a hiking boot. The exposed foam will for sure get shredded.

I heard Altra recently did this with their Olympus 6

The 5's were the same way. Tons of reviews mention the rubber peeling off in the first 50 miles.

Are bears attracted to light colors?

Weight vs wear. Vibram is heavy.
Buddy (250#), bad feet, loves this style of boot. Lots of cushion, and decent traction. Stability is OK. Not terribly nimble, but neither is he.
Got 2 years (about 60 day hikes) before one heel started to peel back a bit.. Glued back on and holding so far.
A 'bit/strip' of Vibram from the front to the back wouldn't add much weight, but could complicate the building process.

Modern boots are a WHOLE LOT more comfortable, often can be worn right out of the box without blisters, and mostly perform way better, But at the price of longevity.
To some extent, know what you need, and what you feet like. Then take your pick. That's not necessarily THAT easy, but it's easier than it used to be with the 'clunker/stomper' boots. Those things were awful. Blisters for years. They never broke in your foot broke down.
