Don't buy this much bonito with such a crappy expiration date if you plan to eat it as is. Dishes like onigiri or hiyayakko. It does lose its flavor and it's very dry flaky texture, quite quickly once you open it too. I've used bonito well after the expiration date with no problem though in soups and dashi. As long as you keep it in a baggie and store it sealed it'll be fine after the best by date for this use. It's mainly the texture that it seems to lose once you crack the seal.

Bonito flakes are very light, a pound is a large amount. I usually only buy 6-12oz bags and I use it quite often.

Grab some kombu and use the two to make broth for a variety of Japanese dishes, including miso soup.

This is great to add that umami element to your cooking. The thing is that you only need small portion of this which is great but if the packet is close to expiry I'd stay away from it. Theres no way you can finish 1lb of flakes in a month unless you're eating ramen for breakfast lunch and dinner each day.

If you're buying this you might also condiser layering the flavors with kombu, dried shitaki etc.

Mostly, I use it to flavor bases for soups and other dishes (boil in water, strain the flakes out). Adds flavor to miso soup, ramen, and okazu.

It takes a fair amount of trial and error to figure out proportions. I don't like to use a kitchen scale and the flakes don't measure easily using any measuring spoons. Use too little and it's tasteless. It's difficult to overseason food, but using too much is simply a waste of product. I don't have any advice other than "season to taste".

Sometimes, I'll use it as tsukemono mixed with grated ginger, soy sauce, over parboiled watercress (best served in small individual dishes, not in one large salad bowl).
