According to the review, both the ram and ssd are soldered. No upgrade path for this. The cell option is unique but not worth it, unless you really need a work laptop away from wifi.

Even then you can just use the hotspot from your cellphone. Paying for more data is probably cheaper than adding a separate device to the existing plan

I believe this might answer your question. "there is a Qualcomm Snapdragon X55 5G modem that will only work with T-Mobile and provides broadband connectivity when paired with an appropriate service plan."

In other words, you cannot unlock the 5G modem and use AT&T or Verizon to provide the 5G data.

Do you think that's soldered on, or something separate/replaceable?

I have a couple tablet lines and a mobile Hotspot line, any reason the tablet line wouldn't work?

It depends on the matchup. Intel's Arc iGPUs trade blows with AMD's 680m and 780m, but what he posted was a laptop using the previous generation Xe1 architecture, which can still be faster than AMD's other offerings but not the 680m in the OP.
Anyways, this laptop has other issues that make it not so great of a deal at $620

Arc iGPUs perform about the same as 680m and 780m.
