You have clearly never eaten too old ramen. By too old, I don't mean like a month after the date, I mean like 4 years after.

All ramen brands are flash fried. The porousity created by that method is why the noodles re-hydrate easier than pretty much any other noodles. That's also why a 4oz package of noodles is 510 calories, beating out the 100 calories/oz of dried pasta, because it's not just carbs, there's also a very thin layer of oil fats covering them. That oil is what goes bad; it becomes rancid. Not dangerous to eat, but you will taste it.

Also when you cook it, before you add the seasoning, can see a small amount of the oil in the broth.

One "hack" I've seen online is to mix about half of the seasoning in a bowl with about 1/2 tbsp mayonnaise (Japanese mayo has a better flavor for this in my opinion, but regular American mayo works too) and the fat really helps cut the spice and adds richness to the broth. After you finish boiling the noodles with the rest of the seasoning, pour into your mayo concoction slowly and mix as you pour. It sounded weird to me at first too.

Check the expiration date on these when you get them. Last time I ordered they expired a month after delivered. Amazon refunded after I chatted in

Thank you. I will check as I ordered last month. Also, the seasoning is obscenely hot. I use about a quarter to a third and add chicken bouillon. I do save the rest of the packet to use in miniscule amounts for potato chips dip and chicken seasoning.

Now a day, I don't use more than half the seasoning package. Too much sodium.

I don't which has the most sodium, but I'd assume both have sodium content. I just try to remember that the listed serving size on the back is actually for HALF the contents...but I always cook and eat the whole packet.

$16.35 / 20 = 0.8175 pack which is a great deal.
Most market sells these for $5 pack of 4 = $1.25 each
In my local Asian market this week, they have a box of 16 (4 packages of 4) at $13.99 = 0.8744 per pack.

The way I cooked these is use water to boil it until 70% al dente. Drain the water and rinse in cold water. boil fresh water add the seasoning. Once boiled, add back the ramen and wait for boil again. Crack an egg on top and covered the lid for 3 minutes.

This stuff is delicious. The noodle texture is definitely an increase in quality from our college ramen days. The spice is controlled by what you put in. No one mentions the dried vegetable packet included in each.
It has all sorts of little bits like dried mushrooms and seaweed.
