It can accept that and if you have a Type-C monitor supporting that much of Power output, you can have single cable operation

Overkill. No real advantage over a basic Intel box for half the price, since the games run in the cloud.

Ideally you buy something with 2 or more Ethernet ports if you are planning for pf or OPNSense. Id look on Ali Exp for fanless Intel i3 n305 4 port 2.5gbps mini pcs. Not only does it have 4 Ethernet ports but also a strong Intel iGPU for transcoding for Plex or jellyfin

This would be just fine. I use a 5600g which is a generation older and it worked fine. I can't say for certain but this should do HW transcoding and HDR tone mapping. Mine does in Plex and it is older.

Strongly recommend a physical box for pfsense/opnsense. I think pfsense may struggle due to the network adapter. That being said there is no reason not to play around and see what you can do.

I switched from proxmox to Unraid for my home server. Yes you have to pay a one time fee but the ability to drop in HDs in raid at anytime is a godsend if your media collection is forever growing.

Bought one of their 790's several months ago and they are just, wow, the most capable little system of all my 30 years building them. Runs 24/7 which I need too. Can't speak for these 760's in particular though. glhf

Should be fine. As others have noted, you will want more NICs, but you can get USB gigabit Ethernet adapters for quite cheap these days the ones with multiple ethernet ports are not that bad either. If you want faster than gigabit then the price jumps and that may be enough to start looking at a box with them built in.
