As soon as I saw "Designed in Australia" I figured it was made in China.
10" isn't available 😞, they're made in China anyways, id wait for something American

Some folks say the smooth polish is a good thing, and that it makes it more non-stick.

But, my old lodge frypans are bumpy and ancient. They never had sticking issues, even after I screw up, destroy the seasoning, and have to re-season it.

Is there any reason to go with something smoother?

In my opinion, only if you have a larger budget and don't want to wait for the seasoning to build up over time. The artisan pans get you there faster.

its interesting.. I'm sure I could google it and get an answer.. it's just weird that it's both milled and cast. I'm guessing they cast it then mill it to get it super slick.

Lodge isn't too rough. I Got some cheapo ones at JCPenney once for black Friday and those were really rough, and it's been a pain to get them nonstick, while my lodge works great.

I have an expensive stargazer and a cheap lodge. The texture of the cheap lodge seems to season way better and the smooth stargazer seasoning is very delicate at first. That said I'll try this pan.

In general you mill metal after casting to get it to the final shape and if you need a smooth face. In the case of skillets you mill to get a smooth face and to reduce the weight.

In theory smooth is supposed to get seasoned faster but non smooth is supposed to hold on to the seasoning faster.

In my experience, my Victoria (smoother than lodge) holds the seasoning better than lodge and much more non stick. The lodge has the seasoning flaking off and not as non stick. I much prefer the Victoria over lodge.

Pictures in reviews put me off. Looks like the surface texture has varied throughout the time they've been making these. I've got enough vintage stuff but would like a decent 12" skillet with a helper handle for certain things.

Edit: Someone pointed out that the pictures are probably all mixed together for the milled and unmilled versions.

Does milling remove that much weight. Your losing 3.5 lbs (almost a milled pan weight) choosing milled pad which assume would translate to less heat retention.

12" Unmilled - 7.5lbs
12 milled - 3.94 lbs

Is that for the milled version only? They have two different types with one being unmilled.
